Ingredients
- 8 oz thin green beans, trimmed
- 2 tsp butter
- 2 tsp vegetable oil
- 3 None scallions, cut into 6 strips, remainder chopped
- 1/2 None red bell pepper, sliced
- 1/2 None yellow bell pepper, sliced
- 1 None small orange, zested and juiced
Method
- Blanch beans in boiling salted water for 3 mins. Drain.
- In a frying pan, heat butter and oil over medium heat. Cook 1 tbsp chopped scallion and peppers for 1 min. Add beans and 2 tbsp orange juice. Season. Cook for 2 mins. Divide mixture into 6 portions then tie each with a scallion strip. Drizzle with pan sauce and garnish with orange zest.
