- 1 3/4 pounds potatoes peeled and cubed
- 14 ounces ground beef
- 1 onion small, finely chopped
- 6 tablespoons breadcrumbs
- 1/4 cup milk
- 1 egg
- 2 teaspoons mustard
- 2 tablespoons canola oil
- 1 leek trimmed and sliced
- 6 radishes sliced
- 4 baby corn sliced
- 1/4 cup salad dressing such as Miracle Whip
- 1/4 cup cider vinegar
- 2 tablespoons whole grain mustard
- 1 teaspoon sugar
Method
- Cook the potatoes in boiling salted water for 12-15 mins until tender.
- Meanwhile, mix the ground beef, onion, breadcrumbs, milk, egg and mustard until well blended. Season. Shape the mixture into small meatballs using wet hands. Heat the oil in a large skillet on medium-high heat. Add the meatballs and fry for 6 mins, turning occasionally.
- Blanch the leek in a saucepan of boiling water for 2-3 mins then drain. Drain the potatoes. Gently toss the meatballs, potatoes, leeks, radish and baby corn in a large bowl.
- Mix the salad dressing, vinegar, mustard and sugar and season generously. Drizzle the salad with dressing.
