Ingredients

  • 1 3/4 pounds potatoes peeled and cubed
  • 14 ounces ground beef
  • 1 onion small, finely chopped
  • 6 tablespoons breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 2 teaspoons mustard
  • 2 tablespoons canola oil
  • 1 leek trimmed and sliced
  • 6 radishes sliced
  • 4 baby corn sliced
  • 1/4 cup salad dressing such as Miracle Whip
  • 1/4 cup cider vinegar
  • 2 tablespoons whole grain mustard
  • 1 teaspoon sugar

Method

  • Cook the potatoes in boiling salted water for 12-15 mins until tender.
  • Meanwhile, mix the ground beef, onion, breadcrumbs, milk, egg and mustard until well blended. Season. Shape the mixture into small meatballs using wet hands. Heat the oil in a large skillet on medium-high heat. Add the meatballs and fry for 6 mins, turning occasionally.
  • Blanch the leek in a saucepan of boiling water for 2-3 mins then drain. Drain the potatoes. Gently toss the meatballs, potatoes, leeks, radish and baby corn in a large bowl.
  • Mix the salad dressing, vinegar, mustard and sugar and season generously. Drizzle the salad with dressing.
