Ingredients

  • 2 lb. yellow squash
  • 2 eggs, slightly beaten
  • 1/2 c. green bell peppers
  • 1/4 c. chopped onion
  • 1 c. mayonnaise
  • 1 c. Parmesan cheese
  • salt and pepper to taste
  • buttered crumbs

Method

  • Steam squash until tender; drain thoroughly.
  • In a large mixing bowl, beat eggs and add remaining ingredients, except buttered crumbs.
  • Mix real well and pour into a buttered casserole dish. Bake at 350° about 20 to 30 minutes.
  • When it is almost done, cover the mixture with buttered crumbs and let them brown lightly.
