Ingredients
- 2 lb. yellow squash
- 2 eggs, slightly beaten
- 1/2 c. green bell peppers
- 1/4 c. chopped onion
- 1 c. mayonnaise
- 1 c. Parmesan cheese
- salt and pepper to taste
- buttered crumbs
Method
- Steam squash until tender; drain thoroughly.
- In a large mixing bowl, beat eggs and add remaining ingredients, except buttered crumbs.
- Mix real well and pour into a buttered casserole dish. Bake at 350° about 20 to 30 minutes.
- When it is almost done, cover the mixture with buttered crumbs and let them brown lightly.
