Ingredients
- 1 lb. pork tenderloin, cut into strips
- 2 Tbsp. dry sherry
- 2 tsp. cornstarch
- 1 tsp. ground cumin
- 1 clove minced garlic
- 1 Tbsp. cooking oil
- 1/2 tsp. seasoned salt
- 1 large tomato, seeded and peeled, cut up
- 1 green pepper, cut in strips
- 1 medium onion, thinly sliced
Method
- Combine sherry, cornstarch, cumin, garlic and seasoned salt in a medium bowl.
- Add pork slices and stir to coat well.
- Heat oil to medium-high.
- Add pork mixture and stir-fry 3 to 4 minutes. Add pepper, onion and tomato pieces.
- Cover pan and simmer 3 to 4 minutes.
- Do not overcook.
