Ingredients

  • 1 lb. pork tenderloin, cut into strips
  • 2 Tbsp. dry sherry
  • 2 tsp. cornstarch
  • 1 tsp. ground cumin
  • 1 clove minced garlic
  • 1 Tbsp. cooking oil
  • 1/2 tsp. seasoned salt
  • 1 large tomato, seeded and peeled, cut up
  • 1 green pepper, cut in strips
  • 1 medium onion, thinly sliced

Method

  • Combine sherry, cornstarch, cumin, garlic and seasoned salt in a medium bowl.
  • Add pork slices and stir to coat well.
  • Heat oil to medium-high.
  • Add pork mixture and stir-fry 3 to 4 minutes. Add pepper, onion and tomato pieces.
  • Cover pan and simmer 3 to 4 minutes.
  • Do not overcook.
