- 1/2 c. margarine
- 1 c. brown sugar
- pineapple slices
- maraschino cherries
- 2/3 c. shortening
- 1 c. sugar
- 2 eggs
- 1 3/4 c. flour
- 1 tsp. vanilla
- pineapple juice
- cherry juice
Method
- In an ovenproof skillet, melt margarine; add brown sugar and mix thoroughly.
- Arrange pineapple slices and cherries over mixture.
- Cream together until fluffy the shortening, sugar and eggs.
- Add flour, vanilla and juices; mix well.
- Pour batter over pineapple and brown sugar mixture.
- Bake at 350° for 25 minutes or until cake tests done.
