Ingredients

  • 1/2 c. margarine
  • 1 c. brown sugar
  • pineapple slices
  • maraschino cherries
  • 2/3 c. shortening
  • 1 c. sugar
  • 2 eggs
  • 1 3/4 c. flour
  • 1 tsp. vanilla
  • pineapple juice
  • cherry juice

Method

  • In an ovenproof skillet, melt margarine; add brown sugar and mix thoroughly.
  • Arrange pineapple slices and cherries over mixture.
  • Cream together until fluffy the shortening, sugar and eggs.
  • Add flour, vanilla and juices; mix well.
  • Pour batter over pineapple and brown sugar mixture.
  • Bake at 350° for 25 minutes or until cake tests done.
