Ingredients
- 4 pork chops, 3/4 to 1-inch thick
- salt and pepper to taste
- flour
- shortening
- 1 can lima beans
- 1 Tbsp. chopped onion
- 1 c. whole tomatoes, drained
- 1/2 tsp. sugar
Method
- Sprinkle chops with salt and pepper.
- Coat chops with flour, brown on both sides in hot shortening.
- Place lima beans in casserole dish; sprinkle with onion.
- Place chops on beans; top with tomatoes.
- Sprinkle with sugar.
- Bake, covered at 325° for 1 1/2 hours, until chops are tender.
- Liquid from tomatoes can be used during baking, if necessary.
- Makes 4 servings.
