Ingredients

  • 4 pork chops, 3/4 to 1-inch thick
  • salt and pepper to taste
  • flour
  • shortening
  • 1 can lima beans
  • 1 Tbsp. chopped onion
  • 1 c. whole tomatoes, drained
  • 1/2 tsp. sugar

Method

  • Sprinkle chops with salt and pepper.
  • Coat chops with flour, brown on both sides in hot shortening.
  • Place lima beans in casserole dish; sprinkle with onion.
  • Place chops on beans; top with tomatoes.
  • Sprinkle with sugar.
  • Bake, covered at 325° for 1 1/2 hours, until chops are tender.
  • Liquid from tomatoes can be used during baking, if necessary.
  • Makes 4 servings.
