Ingredients

  • 6 loin pork chops (1/2-inch thick)
  • 1/4 c. olive oil
  • 1 box fresh mushrooms, sliced
  • 1 green pepper
  • 1 large onion, sliced
  • 1 (No. 2) can plum tomatoes
  • salt and pepper to taste

Method

  • Brown chops in hot oil on both sides; transfer to a saucepan. Saute mushrooms and pepper in remaining oil; spread over chops, then saute onion.
  • Add tomatoes and simmer for 5 minutes.
  • Pour sauce over chops; season with salt and pepper.
  • Cover tightly and simmer until tender, about 30 minutes.
  • Serve at once.
  • Serves six.
