Ingredients
- 6 loin pork chops (1/2-inch thick)
- 1/4 c. olive oil
- 1 box fresh mushrooms, sliced
- 1 green pepper
- 1 large onion, sliced
- 1 (No. 2) can plum tomatoes
- salt and pepper to taste
Method
- Brown chops in hot oil on both sides; transfer to a saucepan. Saute mushrooms and pepper in remaining oil; spread over chops, then saute onion.
- Add tomatoes and simmer for 5 minutes.
- Pour sauce over chops; season with salt and pepper.
- Cover tightly and simmer until tender, about 30 minutes.
- Serve at once.
- Serves six.
