Ingredients

  • 1 cup raisins
  • 1 cup boiling water
  • 1 (15 ounce) can pork & beans
  • 2 cups sugar
  • 3 eggs, beaten
  • 1 cup vegetable oil
  • 1 teaspoon vanilla
  • 3 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 12 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup chopped nuts

Method

  • Preheat oven to 325 .
  • Grease and flour a 5x9-inch loaf pan.
  • Soak raisins in boiling water about 10 minutes.
  • Mash beans with fork until smooth; add sugar, eggs, oil, and vanilla, and mix well.
  • Sift together flour, cinnamon, baking powder, and baking soda, and fold into egg mixture.
  • Drain raisins; fold raisins and nuts into batter mix.
  • Spoon batter into loaf pan.
  • Bake 50-60 minutes or until knife inserted in center comes out clean.
  • Note: If you have a couple of ripe bananas, you may add them to mixture.
