- 1 cup raisins
- 1 cup boiling water
- 1 (15 ounce) can pork & beans
- 2 cups sugar
- 3 eggs, beaten
- 1 cup vegetable oil
- 1 teaspoon vanilla
- 3 cups all-purpose flour
- 1 teaspoon cinnamon
- 12 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup chopped nuts
Method
- Preheat oven to 325 .
- Grease and flour a 5x9-inch loaf pan.
- Soak raisins in boiling water about 10 minutes.
- Mash beans with fork until smooth; add sugar, eggs, oil, and vanilla, and mix well.
- Sift together flour, cinnamon, baking powder, and baking soda, and fold into egg mixture.
- Drain raisins; fold raisins and nuts into batter mix.
- Spoon batter into loaf pan.
- Bake 50-60 minutes or until knife inserted in center comes out clean.
- Note: If you have a couple of ripe bananas, you may add them to mixture.
