Ingredients
- 1 (12.5 oz.) can white chunk chicken
- 2 cans cream of chicken soup
- 1 stick butter, melted
- 12 oz. sour cream
- 1 sleeve Ritz crackers, crushed
- 3 1/2 c. rice
- 2 Tbsp. poppy seed
Method
- Mix soup, sour cream and poppy seed in bowl.
- In separate bowl, mix crackers and butter.
- Prepare rice according to directions.
- Place rice in a 9 x 13-inch casserole dish.
- Spread bite size pieces of chicken across rice.
- Pour soup mixture on top of chicken.
- Top with crushed crackers.
- Bake at 350° for 25 to 30 minutes.
