Ingredients

  • 1 (12.5 oz.) can white chunk chicken
  • 2 cans cream of chicken soup
  • 1 stick butter, melted
  • 12 oz. sour cream
  • 1 sleeve Ritz crackers, crushed
  • 3 1/2 c. rice
  • 2 Tbsp. poppy seed

Method

  • Mix soup, sour cream and poppy seed in bowl.
  • In separate bowl, mix crackers and butter.
  • Prepare rice according to directions.
  • Place rice in a 9 x 13-inch casserole dish.
  • Spread bite size pieces of chicken across rice.
  • Pour soup mixture on top of chicken.
  • Top with crushed crackers.
  • Bake at 350° for 25 to 30 minutes.
