Ingredients
- 1 eggplant, cooked and cubed
- 1/2 c. bread crumbs
- 1 c. canned tomatoes
- 1 c. creamed corn
- 3 Tbsp. butter
- 1 medium onion
- 1 tsp. chopped bell pepper
- salt and pepper to taste
Method
- Cook cubed eggplant in salted water; drain.
- Add bread crumbs, tomatoes and corn.
- Saute onion and bell pepper in butter.
- Add to eggplant mixture.
- Add salt and pepper.
- Put in greased casserole; top with cheese and bread crumbs.
- Bake in a 350° oven for 30 minutes.
