Ingredients

  • 1 c. cornmeal (plain, white or yellow)
  • 1 c. buttermilk
  • 1 can cream-style corn
  • 1 c. shredded Cheddar cheese (sharp)
  • 1/4 c. oil
  • 3 jalapeno peppers, chopped fine (more if you like!!)
  • 1/2 small jar pimiento, drained (for color)
  • 2 eggs, beaten
  • 1 c. onions, chopped

Method

  • Mix everything.
  • Pour into a greased 9 x 13-inch pan, about 1/2-inch thick.
  • Batter will be rather "loose."
  • Bake at 375° for 40 to 45 minutes, or until it begins to "brown" on top.
  • It should be sort of crisp when served.
