Ingredients
- 1 c. cornmeal (plain, white or yellow)
- 1 c. buttermilk
- 1 can cream-style corn
- 1 c. shredded Cheddar cheese (sharp)
- 1/4 c. oil
- 3 jalapeno peppers, chopped fine (more if you like!!)
- 1/2 small jar pimiento, drained (for color)
- 2 eggs, beaten
- 1 c. onions, chopped
Method
- Mix everything.
- Pour into a greased 9 x 13-inch pan, about 1/2-inch thick.
- Batter will be rather "loose."
- Bake at 375° for 40 to 45 minutes, or until it begins to "brown" on top.
- It should be sort of crisp when served.
