Ingredients

  • 4 English muffins halved
  • 1 tablespoon tomato puree
  • 2 tablespoons barbecue sauce
  • 8 3/4 ounces mozzarella
  • 3 1/2 ounces bacon diced
  • 1 1/2 ounces button mushrooms sliced
  • 3 1/2 ounces pepperoni thickly sliced
  • 2 spring onions thinly sliced

Method

  • Preheat oven to 425°F. Grease 2 baking trays. Place English muffins, cut-side up, on prepared trays. Combine tomato puree and barbecue sauce then spread evenly over muffins. Sprinkle with 1/2 the cheese then top with bacon, mushrooms, pepperoni, spring onions and remaining cheese. Bake for 10-12 mins.
