Ingredients

  • 8 oz. Cheddar cheese
  • 8 oz. Mozzarella cheese
  • 8 oz. Monterey Jack cheese
  • 1 can black olives, drained and chopped
  • 1 jar green olives, drained and chopped
  • 1 large can mushrooms, drained and chopped
  • 1 large onion, diced
  • 1/4 c. oil
  • 1 tsp. oregano
  • 1/2 tsp. thyme
  • tomato paste
  • sourdough or English muffins

Method

  • Shred the cheeses.
  • Mix all ingredients together except tomato paste and muffins.
  • Spread tomato paste on muffin halves; then spread on topping mixture.
  • Bake at 425° for 8 to 10 minutes. Topping mixture can be covered and refrigerated and used as needed.
