- 8 oz. Cheddar cheese
- 8 oz. Mozzarella cheese
- 8 oz. Monterey Jack cheese
- 1 can black olives, drained and chopped
- 1 jar green olives, drained and chopped
- 1 large can mushrooms, drained and chopped
- 1 large onion, diced
- 1/4 c. oil
- 1 tsp. oregano
- 1/2 tsp. thyme
- tomato paste
- sourdough or English muffins
Method
- Shred the cheeses.
- Mix all ingredients together except tomato paste and muffins.
- Spread tomato paste on muffin halves; then spread on topping mixture.
- Bake at 425° for 8 to 10 minutes. Topping mixture can be covered and refrigerated and used as needed.
