Ingredients

  • 1/2 c. granulated sugar
  • 1 c. brown sugar
  • 1 heaping c. mashed pinto beans
  • 1/2 c. butter
  • 2 eggs, beaten
  • 1 unbaked pie shell

Method

  • Blend sugars, egg and butter until creamy.
  • Add pinto beans and blend well.
  • Pour into deep 9-inch unbaked shell.
  • Allow room for filling to cook.
  • Bake in 375° oven for 20 minutes, then at 350° for an additional 25 minutes or until a knife inserted near center comes out clean.
  • Tastes like pecan pie.
