Ingredients
- 1 3/4 c. sifted flour
- 1/2 tsp. salt
- 1/4 tsp. soda
- 1/2 c. raisins
- 3/4 c. chopped walnuts
- 3/4 c. golden brown sugar, firmly packed
- 3 Tbsp. soft butter or margarine
- 2 eggs (unbeaten)
- 1 (8.5 oz.) can crushed pineapple (not drained)
Method
- Measure first 3 ingredients into sifter; set aside.
- Plump raisins in boiling water; drain well and set aside with nuts. Gradually beat sugar into butter.
- Beat in eggs, one at a time. Add raisins and nuts.
- Sift in 1/2 of flour mixture; stir just until moistened and fairly smooth.
- Add undrained pineapple, then stir in rest of flour mixture.
- Gently spoon heavy batter into greased 9 x 5 x 3-inch loaf pan.
- Sprinkle with topping mixture.
