Ingredients

  • 3/4 c. chopped Macadamia nuts
  • 1 c. pineapple tidbits, drained (one 13 1/4 oz. can)
  • 1 1/2 tsp. soda
  • 3 Tbsp. soft shortening
  • 1 c. (18 1/4 oz. can) hot crushed pineapple (undrained)
  • 2 eggs
  • 1 tsp. vanilla
  • 1 c. sugar
  • 2 c. sifted all-purpose flour

Method

  • Preheat oven to 350°.
  • Grease a 9 x 5-inch loaf pan.
  • Using a fork, mix together nuts, drained pineapple tidbits, soda and salt. Add shortening and hot crushed pineapple.
  • Mix all together well. Beat eggs; beat in vanilla and sugar.
  • Stir in flour.
  • Add pineapple mixture and stir just until well blended.
  • Pour into prepared pan and bake 1 hour or until bread tests done.
  • Cool in pan for 10 minutes.
  • Bread may be served warm or cold.
  • Makes 1 loaf.
