Ingredients

  • 8 ounces, weight Flour
  • 1-1/2 teaspoon Baking Powder
  • 1 pinch Salt
  • 4 ounces, fluid Milk
  • 2 ounces, weight Sugar
  • 5 ounces, weight Canned Crushed Pineapple In Heavy Syrup
  • 2 whole Eggs
  • 4 ounces, weight Butter, Melted
  • 1/4 cups Shredded Unsweetened Coconut

Method

  • Combine the flour, sugar, baking powder, coconut and salt in a large bowl. In a separate bowl, mix together the milk, eggs and butter, add pineapple and mix with the dry ingredients until just combined. Batter will be lumpy.
  • Bake in a greased loaf pan at 350 degrees for 45 minutes.
