Ingredients
- 8 ounces, weight Flour
- 1-1/2 teaspoon Baking Powder
- 1 pinch Salt
- 4 ounces, fluid Milk
- 2 ounces, weight Sugar
- 5 ounces, weight Canned Crushed Pineapple In Heavy Syrup
- 2 whole Eggs
- 4 ounces, weight Butter, Melted
- 1/4 cups Shredded Unsweetened Coconut
Method
- Combine the flour, sugar, baking powder, coconut and salt in a large bowl. In a separate bowl, mix together the milk, eggs and butter, add pineapple and mix with the dry ingredients until just combined. Batter will be lumpy.
- Bake in a greased loaf pan at 350 degrees for 45 minutes.
