Ingredients

  • 10 whole Eggs
  • 1/2 cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1/8 teaspoons Salt
  • 4 cups Cheese (anything That Melts Well)
  • 2 cups Cottage Cheese
  • 1/2 cups Butter, Melted
  • 1/2 pounds Breakfast Sausage, Cooked And Cooled
  • 1/4 cups Chopped Green Pepper (optional)
  • 2 cans Chopped Green Chilies (optional)
  • 1 can Black Beans, Drained (optional)
  • 1 whole Tomato, Chopped (optional)

Method

  • Preheat oven to 350 degrees. Grease a 13x9 baking dish.
  • In a large bowl, beat eggs.
  • Combine the flour, baking powder and salt. Add to egg mixture. Batter will be slightly lumpy.
  • Add cheese, butter, sausage, and veggies. Stir to combine.
  • Pour into baking dish. Bake, uncovered for 30-40 minutes, or until knife inserted in center comes out clean.
  • Let stand 5-10 minutes before serving.
  • Optional: Serve with sour cream and/or hot sauce.
  • I've varied this recipe; you can use crumbled bacon, multiple cheeses, zucchini, ham ... the list goes on and on. Use whatever you like to eat. I also sometimes add a little heat with either red pepper flakes or cayenne.
