Ingredients
- 1 box yellow cake mix
- 1 (16 oz.) can cream of coconut
- 1 can condensed milk (like Eagle Brand)
- 1 (16 oz.) can crushed pineapple, drained
- 1/3 c. lemon juice
- 1 large container Cool Whip
- 8 oz. coconut
- 1 c. chopped pecans
Method
- Follow directions on box of cake mix.
- Bake at 350° for 30 minutes.
- With fork, punch holes in cake.
- Pour cream of coconut on cake.
- Mix condensed milk, crushed pineapple and lemon juice; spread over cake.
- Spread Cool Whip on top.
- Sprinkle coconut and nuts on top.
- Keep in fridge.
