Ingredients

  • 1 box yellow cake mix
  • 1 (16 oz.) can cream of coconut
  • 1 can condensed milk (like Eagle Brand)
  • 1 (16 oz.) can crushed pineapple, drained
  • 1/3 c. lemon juice
  • 1 large container Cool Whip
  • 8 oz. coconut
  • 1 c. chopped pecans

Method

  • Follow directions on box of cake mix.
  • Bake at 350° for 30 minutes.
  • With fork, punch holes in cake.
  • Pour cream of coconut on cake.
  • Mix condensed milk, crushed pineapple and lemon juice; spread over cake.
  • Spread Cool Whip on top.
  • Sprinkle coconut and nuts on top.
  • Keep in fridge.
