Ingredients

  • 1 package pot sticker (Gyoza) wrappers, 30 or more count.
  • FILLING:
  • 1 lb ground pork
  • 1/4 cup water
  • 1 TBSP oil
  • 2 garlic cloves minced
  • 1 tsp chili powder
  • 1 tsp basil
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp liquid smoke
  • 1/4 cup brown sugar
  • 1/2 cup BBQ sauce
  • 1/2 cup red onion finely chopped
  • 1/2 cup green bell pepper finely chopped
  • 1/2 red bell pepper finely chopped
  • 1/2 tsp cayenne pepper (optional)
  • 2-3 strips of cooked bacon (crumbled)
  • 1-2 green onions finely chopped
  • 1/2 cup Hot or Mild Pepper Rings
  • SAUCE: (for about 24 pot stickers)
  • 1 TBSP Oil
  • 1/2 cup water
  • 1 TBSP tomato paste
  • 1 TBSP apple cider vinegar
  • 2 TBSP BBQ sauce

Method

  • Filling Preparation:
  • Using a non skillet pan on medium high heat place ground pork and 1 TBSP oil into pan and mash apart with a spatula to break up the ground pork. Add water and cook 5-10 minutes until pink color disappears. Add the spices: garlic, chilli powder, basil, onion powder, salt, pepper, liquid smoke, cayenne pepper (optional).
  • Mix well and cook 2-3 minutes. Once the spices are cooked into the meat add the vegetables: red onion, green and red pepper, along with the brown sugar and BBQ sauce. Cook 8-10 minutes to allow flavors to mix. Turn the heat down to medium then add crumbled bacon to pork mixture and cook until sauce thicken 3-5 minutes. Add the chopped green onion at the end of cooking and set aside to cool.
  • Once filling has cooled, take one Gyoza wrapper and place the 2 Hot or Mild Pepper rings in the middle. Add 1 tsp of filling on top. Wet the edges of the wrapper with your finger dripped into water. Fold the wrapper in half and creating a tiny "fold and pinch" at the top. It should look like a fancy vertical napkin fold. Then fold and pinch halfway down one side and then again pinch the bottom corner. Repeat down the other side forming a half moon shape. Place aside in a large pan and cover.
  • Repeat this process for the remaining pot stickers.
  • Cooking:
  • In a large skillet with lid place oil and heat on Medium high. Once oil is hot add the pot stickers to the pan placing the seam side up in a close tight pattern. Lightly press the pot stickers to flatten the bottom. While they are browning, mix the tomato paste, water, BBQ sauce and apple cider vinegar in a small bowl. The sauce can be made on the spot or prepared beforehand. Once the bottoms are crispy then quickly pour the sauce over the pot stickers and cover. Allow to cook for 8-10 minutes to let sauce absorb. When the sauce has been absorbed and your pot stickers are crispy then remove from heat and serve.
