Ingredients

  • 4 qt. sliced cucumbers
  • 9 small onions
  • 2 green peppers
  • 1/2 c. salt
  • 1 pt. cider vinegar
  • 4 c. sugar
  • 1 tsp. celery seed
  • 1 tsp. turmeric powder
  • 2 Tbsp. mustard seed
  • 1 tsp. mixed pickling spice

Method

  • Slice cucumbers, onions and peppers.
  • Place in large crock. Sprinkle salt over vegetables and cover with water.
  • Soak in crock overnight.
  • Drain. Combine vinegar, sugar, celery seed, turmeric powder, mustard seed and spice in a large kettle.
  • Bring to a boil.
  • Put drained vegetables in syrup and cook 20 minutes. Pack into hot, sterilized jars and seal.
