Ingredients

  • 1 lb. whole wheat pasta
  • 4 chicken sausages, iserno
  • 2 14.5 ounce cans italian style diced tomatoes
  • 1/2 c. sun dried tomatoes in oil, diced
  • 2-3 cloves smashed/minced garlic
  • 1-1/4 c. pesto
  • 2-3 T. toasted pine nuts
  • 1 T. capers
  • Garnish with parsley/parmasean

Method

  • Saute sausages in skillet. Slice and set aside.
  • Start cooking pasta. Strain tomatoes, saving some juice.
  • Saute garlic in large skillet, 30 seconds. Add tomatoes and some juice, saute until reduced slightly, about 5-6 mins. Add pesto, sun dried tomatoes, sausage, pine nuts and capers.
  • Add pasta to skillet, toss to coat. Garnish with parsley/parmasean.
