Ingredients
- 1 lb. whole wheat pasta
- 4 chicken sausages, iserno
- 2 14.5 ounce cans italian style diced tomatoes
- 1/2 c. sun dried tomatoes in oil, diced
- 2-3 cloves smashed/minced garlic
- 1-1/4 c. pesto
- 2-3 T. toasted pine nuts
- 1 T. capers
- Garnish with parsley/parmasean
Method
- Saute sausages in skillet. Slice and set aside.
- Start cooking pasta. Strain tomatoes, saving some juice.
- Saute garlic in large skillet, 30 seconds. Add tomatoes and some juice, saute until reduced slightly, about 5-6 mins. Add pesto, sun dried tomatoes, sausage, pine nuts and capers.
- Add pasta to skillet, toss to coat. Garnish with parsley/parmasean.
