Ingredients

  • 1 1/2 lb ground beef (chuck)
  • 1 medium onion chopped
  • 2 Tbsp butter
  • 6 oz can tomato paste
  • 1/2 package lasagne noodles
  • 1 lb small curd cottage cheese
  • 2-3 cups shredded mozzarella/asiago cheese
  • 12 slices provolone cheese
  • 1/4 cup chopped celery
  • 1 clove garlic, minced
  • 16 oz fire roasted crushed tomatoes
  • 1 1/2 tsp salt
  • 1/2 tsp cayenne pepper
  • 1/2 tsp oregano
  • 1 bay leaf
  • 1/3 cu Parmesan cheese

Method

  • Pre heat oven to 350 degrees
  • Fry celery, onion, garlic in butter until tender.
  • Add meat. Brown. Pour off excess fat.
  • Add tomatoes, tomato paste, salt, pepper, oregano, bay leaf and clook slowly 20 min
  • Meanwhile, boil/rinse noodles
  • Remove bay leaf. Add cottage cheese. Stir and bring to a boil.
  • Layer in 9X13 baking dish noodles, 1/2 meat sauce, provolone cheese, 1/2 mozzarella/asiago cheese, noodles, meat sauce, provolone cheese, mozzarella/asiago cheese and Parmesan cheese.
  • Cover with foil. Cook 20-25 minutes. Uncover and cook until golden and bubbly (total 30-45 minutes).
