Ingredients
- 2 1/4 lb. cut up frying chicken
- 1/2 c. juice packed crushed pineapple
- 2 Tbsp. soy sauce
- 3 Tbsp. low calorie Thousand Island dressing
Method
- Brown chicken pieces, skin side up, in a 400° oven or under the broiler to melt fat from the skin.
- Arrange the browned chicken, skin side up, in a baking dish.
- Combine remaining ingredients and spoon over chicken.
- Bake, uncovered, at 350° until tender, about 25 minutes, basting occasionally with the sauce.
- Serves 6.
