Ingredients

  • 2 1/4 lb. cut up frying chicken
  • 1/2 c. juice packed crushed pineapple
  • 2 Tbsp. soy sauce
  • 3 Tbsp. low calorie Thousand Island dressing

Method

  • Brown chicken pieces, skin side up, in a 400° oven or under the broiler to melt fat from the skin.
  • Arrange the browned chicken, skin side up, in a baking dish.
  • Combine remaining ingredients and spoon over chicken.
  • Bake, uncovered, at 350° until tender, about 25 minutes, basting occasionally with the sauce.
  • Serves 6.
