Ingredients

  • 1 c. all-purpose flour
  • 1/2 c. butter
  • 2 eggs, beaten
  • 1 1/2 c. brown sugar
  • 1 1/2 c. pecans, chopped
  • 2 Tbsp. flour
  • 1/2 c. coconut (optional)
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1 1/2 c. confectioners sugar
  • lemon juice

Method

  • Sift flour before measuring.
  • Blend 1 cup flour and the butter to a smooth paste.
  • Spread this mixture in a 9 x 12-inch pan; bake in a 350° oven for 12 minutes.
  • Spread the baked dough with the following mixture:
  • combine beaten eggs, brown sugar, pecans 2 tablespoons flour, coconut (if desired), baking powder, salt and vanilla.
  • Bake at 350° for 25 minutes.
  • Stir lemon juice into confectioners sugar a little at a time, until spreading consistency, then ice cookies after they have cooled.
  • Cut into squares or bars.
