Ingredients

  • 1 lb linguine or spaghetti (fresh or dried)
  • 3-4 cups red and yellow
  • cherry tomatoes
  • 1 cup fresh basil
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic
  • 2tbs reserved cooking water
  • sea salt and fresh ground pepper to taste
  • 1/4 cup grated Parmesan cheese

Method

  • 1. Boil water and cook pasta following directions on package.
  • 2. In a large bowl half tomatoes, tear or chop basil, thinly slice garlic, and add all other ingredients.
  • 3. drain cooked spaghetti add to bowl along with reserved cooking water.
  • 4. serve right away or chilled sprinkled with cheese. enjoy.
