- 1 lb linguine or spaghetti (fresh or dried)
- 3-4 cups red and yellow
- cherry tomatoes
- 1 cup fresh basil
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic
- 2tbs reserved cooking water
- sea salt and fresh ground pepper to taste
- 1/4 cup grated Parmesan cheese
Method
- 1. Boil water and cook pasta following directions on package.
- 2. In a large bowl half tomatoes, tear or chop basil, thinly slice garlic, and add all other ingredients.
- 3. drain cooked spaghetti add to bowl along with reserved cooking water.
- 4. serve right away or chilled sprinkled with cheese. enjoy.
