Ingredients

  • 2 c. shelled peas or possibly 1 (10 ounce.) pkg. frzn peas or possibly 1 (17 ounce.) can peas
  • 1 c. cubed Cheddar cheese
  • 2 hard cooked Large eggs, minced
  • 1/4 c. minced celery
  • 2 tbsp. minced onion
  • 2 tbsp. minced pimiento
  • 1/3 c. mayonnaise
  • 1/2 teaspoon salt
  • 1/4 teaspoon Tabasco sauce
  • 1/8 teaspoon pepper

Method

  • Cook peas and drain.
  • In large bowl combine peas, cheese, cubes, hard cooked Large eggs, celery, onion and pimento.
  • Combine mayonnaise, salt, Tabasco and pepper.
  • Add in to pea mix; toss to combine, cover and chill several hrs or possibly overnight.
  • Stir well.
