- 12 cup butter, softened
- 12 cup sugar
- 14 cup light brown sugar, packed
- 1 cup flour
- 1 cup quick-cooking rolled oats
- 14 teaspoon baking soda
- 14 teaspoon salt
- 1 cup peanut butter chips
- 1 12 cups cranberries
- 23 cup light corn syrup
- 12 cup water
- 1 teaspoon vanilla extract
Method
- heat oven to 350.
- Greese 8-inch baking pan.
- beat butter and sugars in a bowl until fluffy.
- Stir together flour, oats, baking powder and salt.
- gradually add to butter, will be the consistency of coarse crumbs when fully mixed.
- stir in chips.
- Reserve 1 1/2 cups crumbs for topping.
- Firmly press remaining mixture in the bottom of the pan.
- Bake 15 minutes or until set.
- In medium saucepan, combine cranberries, corn syrup and water.
- Until mixture boils.
- Reduce heat; simmer 15 minutes.
- Remove from heat.
- stir in vanilla.
- spread evenly over baked layer.
- sprinkle reserved crumbs on top.
- return to oven; bake for 15 to 20 minutes.
- cool completely.
- cut into 16 bars.
