Ingredients

  • 1/2 c. soft shortening (1/2 butter)
  • 1/2 c. peanut butter
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 1 egg
  • 1 1/4 c. sifted flour
  • 1/2 tsp. baking powder
  • 3/4 tsp. soda
  • 1/4 tsp. salt

Method

  • Mix together thoroughly the first 5 ingredients.
  • Sift together and stir in the remaining ingredients.
  • Chill dough. Roll into balls size of large walnuts.
  • Place 3 inches apart on lightly greased baking sheet.
  • Flatten with fork dipped in flour, crisscross.
  • Bake until set, but not hard at 375° (quick moderate oven).
  • Bake 10 to 12 minutes.
  • Makes about 3 dozen 2 1/2-inch cookies.
  • Spread melted peanut butter chips on top for frosting.
