Ingredients
- 1/2 c. soft shortening (1/2 butter)
- 1/2 c. peanut butter
- 1/2 c. sugar
- 1/2 c. brown sugar
- 1 egg
- 1 1/4 c. sifted flour
- 1/2 tsp. baking powder
- 3/4 tsp. soda
- 1/4 tsp. salt
Method
- Mix together thoroughly the first 5 ingredients.
- Sift together and stir in the remaining ingredients.
- Chill dough. Roll into balls size of large walnuts.
- Place 3 inches apart on lightly greased baking sheet.
- Flatten with fork dipped in flour, crisscross.
- Bake until set, but not hard at 375° (quick moderate oven).
- Bake 10 to 12 minutes.
- Makes about 3 dozen 2 1/2-inch cookies.
- Spread melted peanut butter chips on top for frosting.
