Ingredients

  • 1 Tbsp. butter
  • 1 1/2 lb. cubed lean beef
  • 2 onions, sliced
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 bay leaf
  • 1/4 tsp. thyme
  • 1 Tbsp. flour
  • 1 1/2 c. red wine
  • 2 Tbsp. chopped parsley
  • 2 slices carrots
  • 1/2 c. water

Method

  • Melt butter in heavy saucepan.
  • Brown beef and onions.
  • Blend in flour, salt and pepper.
  • Add thyme, wine and water, stirring constantly, until mixture reaches the boiling point.
  • Add parsley, carrots and bay leaf.
  • Cover and cook over low heat for at least 2 hours or until tender.
  • Add more water, if needed.
  • Serve with rice.
  • Serves 6.
