Ingredients
- 1 Tbsp. butter
- 1 1/2 lb. cubed lean beef
- 2 onions, sliced
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 bay leaf
- 1/4 tsp. thyme
- 1 Tbsp. flour
- 1 1/2 c. red wine
- 2 Tbsp. chopped parsley
- 2 slices carrots
- 1/2 c. water
Method
- Melt butter in heavy saucepan.
- Brown beef and onions.
- Blend in flour, salt and pepper.
- Add thyme, wine and water, stirring constantly, until mixture reaches the boiling point.
- Add parsley, carrots and bay leaf.
- Cover and cook over low heat for at least 2 hours or until tender.
- Add more water, if needed.
- Serve with rice.
- Serves 6.
