Ingredients

  • 1 c. peanuts, roasted
  • 1 c. sugar
  • 1/2 c. light corn syrup
  • 1/8 tsp. salt
  • 1 Tbsp. butter
  • 1 tsp. vanilla
  • 1 tsp. baking soda

Method

  • Line a jelly roll pan with aluminum foil.
  • Butter foil and set aside.
  • Combine first 4 ingredients in a heavy, 2-quart saucepan. Cook over low heat, stirring gently until sugar dissolves.
  • Cover and cook over medium heat for 2 to 3 minutes to wash down sugar crystals from the sides of the pan.
  • Uncover and cook to hard crack stage on candy thermometer.
  • Stir in butter, vanilla and soda.
  • Pour mixture onto buttered foil, spreading thinly.
  • Let cool and break into pieces.
  • Yields 3/4 pound.
