Ingredients

  • 3/4 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 (3 1/2 oz.) pkg. vanilla pudding (not instant)
  • 1/2 c. sugar and 1 Tbsp.
  • 1/2 tsp. cinnamon
  • 3 Tbsp. butter or margarine, soft
  • 1 egg
  • 1/2 c. milk
  • 1 (15 oz.) can sliced peaches, drain and save 3 Tbsp. juice
  • 1 (8 oz.) pkg. cream cheese, soft

Method

  • Combine flour, baking powder, salt, pudding, butter, egg and milk; beat for 2 minutes.
  • Pour into a greased 9-inch deep dish or regular pie pan.
  • Lay peach slices over batter.
  • Combine cream cheese, 1/2 cupful of sugar and 3 tablespoons of peach juice. Beat for 2 minutes.
  • Spread evenly over top of cake, leaving 1 inch around edge.
  • Combine 1 tablespoon of sugar and 1/2 teaspoon of cinnamon.
  • Sprinkle over top.
  • Bake at 350° for 30 to 35 minutes.
  • Serves 8.
