Ingredients

  • 2 firm ripe peaches
  • 2 1/4 c. all-purpose flour
  • 1/2 c. granulated sugar
  • 1/4 c. packed brown sugar
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 2 large eggs
  • 2 Tbsp. plus 2 tsp. vegetable oil
  • 1 tsp. almond extract
  • 1 tsp. fresh lemon juice

Method

  • Preheat oven to 350°.
  • Lightly spray 8 1/2-inch loaf pan with nonstick cooking spray.
  • Bring a medium saucepan of water to a boil over high heat.
  • Add peaches and blanch for 30 to 45 seconds. Remove the peaches to a colander and cool under cold running water to stop the cooking.
  • Set aside.
