- 2 firm ripe peaches
- 2 1/4 c. all-purpose flour
- 1/2 c. granulated sugar
- 1/4 c. packed brown sugar
- 1 tsp. baking soda
- 1/4 tsp. salt
- 2 large eggs
- 2 Tbsp. plus 2 tsp. vegetable oil
- 1 tsp. almond extract
- 1 tsp. fresh lemon juice
Method
- Preheat oven to 350°.
- Lightly spray 8 1/2-inch loaf pan with nonstick cooking spray.
- Bring a medium saucepan of water to a boil over high heat.
- Add peaches and blanch for 30 to 45 seconds. Remove the peaches to a colander and cool under cold running water to stop the cooking.
- Set aside.
