- 1 large can whole, peeled tomatoes
- 1 large or 2 small zucchini, peeled
- 1 medium onion
- 1 tsp. chives
- 1 large clove garlic
- 2 Tbsp. fresh chopped parsley
- 1 Tbsp. fresh chopped basil
- 1 to 2 Tbsp. oil
- 1/4 tsp. pepper
- 1/4 tsp. lemon pepper
- 1/2 tsp. salt
- 1 Tbsp. red wine
- 1 Tbsp. grated Parmesan cheese (optional)
Method
- Crush tomatoes in saucepan and set aside. Chop zucchini, onion and garlic in small pieces.
- Saute in a Teflon frying pan with the oil, parsley and basil for about 10 minutes.
- Add to the tomatoes and heat to boiling. Add the salt, pepper, lemon pepper, wine and cheese. Simmer, uncovered, for approximately 15 to 20 minutes. Serve over spaghetti.
