Ingredients

  • 1 large can whole, peeled tomatoes
  • 1 large or 2 small zucchini, peeled
  • 1 medium onion
  • 1 tsp. chives
  • 1 large clove garlic
  • 2 Tbsp. fresh chopped parsley
  • 1 Tbsp. fresh chopped basil
  • 1 to 2 Tbsp. oil
  • 1/4 tsp. pepper
  • 1/4 tsp. lemon pepper
  • 1/2 tsp. salt
  • 1 Tbsp. red wine
  • 1 Tbsp. grated Parmesan cheese (optional)

Method

  • Crush tomatoes in saucepan and set aside. Chop zucchini, onion and garlic in small pieces.
  • Saute in a Teflon frying pan with the oil, parsley and basil for about 10 minutes.
  • Add to the tomatoes and heat to boiling. Add the salt, pepper, lemon pepper, wine and cheese. Simmer, uncovered, for approximately 15 to 20 minutes. Serve over spaghetti.
