Ingredients

  • 10 eggs
  • 6 sweet ripened plantains
  • 1/2 lb. ground beef
  • 1/2 lb. ground pork
  • 1/2 can tomato sauce
  • 2 cans French-cut string beans
  • Adobo (seasoning)
  • 2 tsp. Recaito Goya

Method

  • Saute ground beef and pork; shake some Adobo as you saute to taste.
  • Add tomato sauce; simmer.
  • Add green beans; let simmer. Slice plantains into long strands (5 to 6 each).
  • In frying pan, brown plantains and set aside.
  • Beat eggs with a pinch of salt. In a large (lasagna type) pan, pour 1/3 of egg mixture.
  • Put in microwave for 3 minutes or until a little hard.
  • Place 1/2 of plantains on top of egg base; cover whole pan.
  • Add meat mixture on top of plantains.
  • Add the rest of the plantains, rest of the eggs (make sure to cover the whole pan) and bake at 350° for 45 minutes.
