Ingredients
- 10 eggs
- 6 sweet ripened plantains
- 1/2 lb. ground beef
- 1/2 lb. ground pork
- 1/2 can tomato sauce
- 2 cans French-cut string beans
- Adobo (seasoning)
- 2 tsp. Recaito Goya
Method
- Saute ground beef and pork; shake some Adobo as you saute to taste.
- Add tomato sauce; simmer.
- Add green beans; let simmer. Slice plantains into long strands (5 to 6 each).
- In frying pan, brown plantains and set aside.
- Beat eggs with a pinch of salt. In a large (lasagna type) pan, pour 1/3 of egg mixture.
- Put in microwave for 3 minutes or until a little hard.
- Place 1/2 of plantains on top of egg base; cover whole pan.
- Add meat mixture on top of plantains.
- Add the rest of the plantains, rest of the eggs (make sure to cover the whole pan) and bake at 350° for 45 minutes.
