Ingredients

  • 1 whole chicken, boiled, boned, skinned and diced (save liquid)
  • 1 onion, diced and sauteed
  • 1 (4 oz.) can green chili salsa
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 c. milk
  • 1/2 lb. Cheddar cheese
  • 1/2 lb. Jack cheese
  • 1 (12 count) pkg. corn tortillas
  • 1 lb. flat, oval pasta
  • 4 lb. Ricotta cheese
  • 1 doz. eggs
  • 1/2 pepperoni stick, sliced and chopped into small pieces
  • 1/2 lb. Parmesan or Romano cheese

Method

  • Thoroughly mix all ingredients together.
  • Bake in a casserole for 1 hour at 350°.
  • Cut into finger size pieces.
  • Can be served warm or cold.
