- 1 whole chicken, boiled, boned, skinned and diced (save liquid)
- 1 onion, diced and sauteed
- 1 (4 oz.) can green chili salsa
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 c. milk
- 1/2 lb. Cheddar cheese
- 1/2 lb. Jack cheese
- 1 (12 count) pkg. corn tortillas
- 1 lb. flat, oval pasta
- 4 lb. Ricotta cheese
- 1 doz. eggs
- 1/2 pepperoni stick, sliced and chopped into small pieces
- 1/2 lb. Parmesan or Romano cheese
Method
- Thoroughly mix all ingredients together.
- Bake in a casserole for 1 hour at 350°.
- Cut into finger size pieces.
- Can be served warm or cold.
