Ingredients

  • 2 tbsp butter, melted
  • 1/2 cup granulated sugar
  • 6 None egg whites
  • 1 jar (10 oz) lemon curd
  • 3 None passionfruit, pulp removed, plus additional, to serve
  • None None Powdered sugar, to serve
  • None None Whipped cream, to serve

Method

  • Preheat the oven to 400°F. Brush eight 1/2-cups ramekins with the melted butter. Dust with 1/4 cup of the sugar, shaking out excess.
  • Beat egg whites in a medium bowl with an electric mixer until soft peaks firm. Gradually add remaining 1/4 cup sugar, beating until stiff and glossy.
  • Mix lemon curd and passionfruit pulp in a large bowl. Gently fold in egg whites in two batches.
  • Divide mixture evenly among ramekins. Place on a baking pan.
  • Bake 10-15 mins, until risen and golden. Dust with powdered sugar. Serve immediately with whipped cream and additional passionfruit.
