Ingredients

  • 1 1/2 lb. small new potatoes, red or white
  • 3 Tbsp. water
  • 2 Tbsp. margarine or butter
  • 1 Tbsp. chopped parsley
  • 2 tsp. lemon juice
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Method

  • Scrub potatoes.
  • Place potatoes and water in covered microwave-safe dish.
  • Cook on full power in the microwave, 8-10 minutes or until fork tender, stirring once.
  • Drain water.
  • Add remaining ingredients, stirring to combine.
  • Microwave for 45 seconds on full power.
  • Place potatoes in serving bowl and pour sauce over them.
