- 4 eggs
- 1/2 c. half and half
- 1/2 c. Parmesan cheese
- 6 chicken breast halves, skinned, boned, and flattened
- 1 c. flour
- olive oil
- 1 c. chicken broth
- 1 c. butter
- 1/2 c. white wine (optional)
- 2 Tbsp. lemon juice
- 1 tsp. chopped parsley
- freshly ground pepper
Method
- Combine eggs, half and half, and Parmesan cheese in bowl; set aside.
- Coat chicken breasts with flour; shake off excess.
- Heat oil until haze forms (use large skillet).
- Whisk egg mixture and dip breasts to coat evenly.
- Add chicken to skillet, then reduce heat to low and saute slowly until golden brown, turning occasionally to cook evenly.
- Remove to heated platter and keep warm in 200° oven.
