Ingredients

  • 4 eggs
  • 1/2 c. half and half
  • 1/2 c. Parmesan cheese
  • 6 chicken breast halves, skinned, boned, and flattened
  • 1 c. flour
  • olive oil
  • 1 c. chicken broth
  • 1 c. butter
  • 1/2 c. white wine (optional)
  • 2 Tbsp. lemon juice
  • 1 tsp. chopped parsley
  • freshly ground pepper

Method

  • Combine eggs, half and half, and Parmesan cheese in bowl; set aside.
  • Coat chicken breasts with flour; shake off excess.
  • Heat oil until haze forms (use large skillet).
  • Whisk egg mixture and dip breasts to coat evenly.
  • Add chicken to skillet, then reduce heat to low and saute slowly until golden brown, turning occasionally to cook evenly.
  • Remove to heated platter and keep warm in 200° oven.
