Ingredients

  • 1 pt. light sour cream
  • 2 Tbsp. lemon juice
  • 1/4 to 1/2 c. sugar
  • 1/8 tsp. salt
  • 1 (8 oz.) can crushed pineapple, well drained
  • 1 or 2 bananas, diced
  • 4 drops red food coloring
  • 1/4 c. chopped pecans
  • 1 (16 oz.) can pitted dark sweet cherries, well drained
  • 12 lettuce cups

Method

  • Combine sour cream, lemon juice, sugar, salt, pineapple, bananas and food coloring; mix well.
  • Fold in nuts and cherries. Place 12 cupcake papers in muffin tins.
  • Spoon mixture into cups evenly.
  • Cover with plastic wrap and freeze.
