- 1 pt. light sour cream
- 2 Tbsp. lemon juice
- 1/4 to 1/2 c. sugar
- 1/8 tsp. salt
- 1 (8 oz.) can crushed pineapple, well drained
- 1 or 2 bananas, diced
- 4 drops red food coloring
- 1/4 c. chopped pecans
- 1 (16 oz.) can pitted dark sweet cherries, well drained
- 12 lettuce cups
Method
- Combine sour cream, lemon juice, sugar, salt, pineapple, bananas and food coloring; mix well.
- Fold in nuts and cherries. Place 12 cupcake papers in muffin tins.
- Spoon mixture into cups evenly.
- Cover with plastic wrap and freeze.
