Ingredients

  • 3 Tbsp. butter or margarine
  • 2 eggs
  • 1/2 c. chopped onion
  • 1/2 c. frozen peas or mixed vegetables (optional)
  • 1 1/2 c. Minute rice
  • 1 1/4 c. water
  • 3 Tbsp. soy sauce
  • 1/4 c. water

Method

  • Boil water in a small saucepan.
  • Add rice.
  • Stir and remove from burner. Cover with lid.
  • In a medium size skillet, melt butter over medium-low heat.
  • Scramble eggs.
  • Add onion and frozen vegetables.
  • Stir 3 to 4 minutes. Add rice and simmer until water is absorbed.
  • Mix soy sauce in 1/4 cup water.
  • Add to rice mixture. Simmer until water is absorbed (3 to 5 minutes).
