Ingredients
- 3 Tbsp. butter or margarine
- 2 eggs
- 1/2 c. chopped onion
- 1/2 c. frozen peas or mixed vegetables (optional)
- 1 1/2 c. Minute rice
- 1 1/4 c. water
- 3 Tbsp. soy sauce
- 1/4 c. water
Method
- Boil water in a small saucepan.
- Add rice.
- Stir and remove from burner. Cover with lid.
- In a medium size skillet, melt butter over medium-low heat.
- Scramble eggs.
- Add onion and frozen vegetables.
- Stir 3 to 4 minutes. Add rice and simmer until water is absorbed.
- Mix soy sauce in 1/4 cup water.
- Add to rice mixture. Simmer until water is absorbed (3 to 5 minutes).
