Ingredients

  • 2 Tbsp. unsalted butter
  • 1 1/2 c. minced white onion
  • 2 cloves garlic, minced
  • 1/2 tsp. ancho or regular chili powder
  • 5 c. fresh or frozen corn kernels
  • 1 bunch green onions, sliced (1 c.)
  • 1/2 tsp. salt
  • 1/8 tsp. black pepper
  • 1/4 c. chopped fresh cilantro

Method

  • In 12-inch skillet, melt butter. Add onion, garlic and chili powder; cook 7 minutes to brown lightly. Add corn, green onions, salt and pepper. Cook until corn is just tender. Add cilantro. Makes 8 servings.
