Ingredients

  • 1 lb. round steak, 3/4-inch thick
  • small amount oil
  • 1 c. water
  • 2 Tbsp. soy sauce
  • chopped onion
  • 1 c. carrot slices
  • 1 c. celery slices
  • 1/2 green pepper, cut in strips
  • 1/2 lb. fresh mushrooms, sliced
  • 1 small can water chestnuts, sliced
  • salt to taste
  • 1/4 c. cold water
  • 2 Tbsp. cornstarch

Method

  • Cut meat into strips, 1/4-inch wide and 2 to 3 inches long. Brown in small amount of oil; drain.
  • Add 1 cup water, soy sauce and chopped onion.
  • Cover and simmer 45 minutes.
  • Then add carrot, celery, green pepper, mushrooms, water chestnuts and salt to taste.
  • Cover and cook 15 to 20 minutes; do not overcook.
  • Combine cold water and cornstarch and gradually add to hot meat and vegetables, stirring constantly until mixture boils and thickens. Serve over rice.
  • Yields 4 servings.
