Ingredients

  • 1/2 pkg. Monterey Jack cheese
  • 1/2 pkg. Cheddar cheese
  • 1 bunch scallions
  • 1/2 to 3/4 c. mayonnaise
  • 1 loaf French bread, buttered
  • 2 c. milk
  • 2 1/2 Tbsp. dry yeast
  • 1/2 c. shortening
  • 1/4 c. sugar
  • 1 tsp. salt
  • 6 1/2 to 7 c. flour

Method

  • Combine yeast, shortening, sugar, salt and 3 cups of the flour.
  • Heat milk to 120° to 130°.
  • Add milk and beat 200 strokes. Stir in as much of the remaining flour as possible.
  • Knead 10 minutes on floured surface.
  • Place in greased bowl, cover with damp towel and let rise until doubled, 45 minutes to 1 hour.
