Ingredients
- 150 gr. Lemon Juice (Meyer Lemons preferred)
- 200 gr. Sugar
- 185 gr. Eggs
- 2 Lemon zest
- 265 gr. Butter
- 2 gr. Gelatine or 1 Leaf
Method
- Soak Gelatine.
- Mix eggs, zest and sugar then add lemon juice and butter.
- Bring to a boil while whisking. Make sure butter melts before bringing to a boil.
- Strain then add gelatine.
- Cool with a paddle in mixer or pour into a pie shell.
