Ingredients
- 1 1/2 c. sugar
- 2/3 c. rice (regular, not precooked or instant)
- 7 c. milk (or 2 qt. less 1 c.)
- 3 or 4 eggs
- 1 c. milk
- 2 tsp. vanilla
Method
- Mix sugar, rice and milk; boil 1 hour, stirring occasionally. Set aside.
- Beat eggs; add leftover 1 cup milk plus vanilla.
- Add to milk mix, slowly stirring.
- Cool and serve topped with cinnamon or nutmeg.
- Do not boil after egg mixture is added.
