- 2 c. shreds of whole bran cereal
- 2 c. low-fat buttermilk
- 1/2 c. oil
- 1 Tbsp. grated orange peel
- 4 egg whites or 2 eggs
- 2 1/2 c. flour
- 1 1/2 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
Method
- In a large bowl, combine cereal and buttermilk; let stand 5 minutes until cereal is softened.
- Add oil, orange peel and egg whites; blend well.
- Lightly spoon flour into measuring cup; level off.
- Stir in flour, sugar, baking powder, baking soda and salt; mix well.
- Batter can be baked immediately or stored in a tightly covered container in the refrigerator up to 2 weeks.
