Ingredients

  • 2 c. shreds of whole bran cereal
  • 2 c. low-fat buttermilk
  • 1/2 c. oil
  • 1 Tbsp. grated orange peel
  • 4 egg whites or 2 eggs
  • 2 1/2 c. flour
  • 1 1/2 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt

Method

  • In a large bowl, combine cereal and buttermilk; let stand 5 minutes until cereal is softened.
  • Add oil, orange peel and egg whites; blend well.
  • Lightly spoon flour into measuring cup; level off.
  • Stir in flour, sugar, baking powder, baking soda and salt; mix well.
  • Batter can be baked immediately or stored in a tightly covered container in the refrigerator up to 2 weeks.
