Ingredients
- 1/2 (12 oz.) pkg. noodles (medium or large)
- 2 c. pineapple juice
- 3 oz. pkg. orange Jell-O
- 1 c. orange sections (fresh or canned)
- 1/2 c. diced cucumber
Method
- Cook the noodles as mentioned on the package.
- Drain and rinse in cold water; drain again and cool the noodles.
- Bring to a boil 1 cup pineapple juice.
- Remove from the heat and add the orange Jell-O, stirring to dissolve the gelatin.
- Then add the rest of the juice and let cool the mixture until it is half taken in Jell-O. Add the noodles, the orange sections and the diced cucumber.
- Pour in an already buttered 1 1/2-quart mold and refrigerate.
- To serve, unmold on lettuce.
