Ingredients

  • 1/2 (12 oz.) pkg. noodles (medium or large)
  • 2 c. pineapple juice
  • 3 oz. pkg. orange Jell-O
  • 1 c. orange sections (fresh or canned)
  • 1/2 c. diced cucumber

Method

  • Cook the noodles as mentioned on the package.
  • Drain and rinse in cold water; drain again and cool the noodles.
  • Bring to a boil 1 cup pineapple juice.
  • Remove from the heat and add the orange Jell-O, stirring to dissolve the gelatin.
  • Then add the rest of the juice and let cool the mixture until it is half taken in Jell-O. Add the noodles, the orange sections and the diced cucumber.
  • Pour in an already buttered 1 1/2-quart mold and refrigerate.
  • To serve, unmold on lettuce.
