Ingredients

  • 2 yellow onions medium-sized, diced
  • 1/2 tablespoon butter light
  • 1/2 teaspoon paprika
  • 1 pinch salt
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon balsamic vinegar
  • 3 tablespoons cream cheese at room temperature
  • 1/4 cup light sour cream
  • 1/4 cup light mayonnaise

Method

  • Saute the onion in the butter at medium-high heat together with the paprika and salt. Cook, stirring constantly, for 10 minutes.
  • Reduce the heat to low and cook for 25 minutes more, stirring occasionally until the onions are dark and caramelized. Add the mustard and vinegar and cook for 2 minutes, stirring constantly. Remove from heat and let cool completely.
  • Mix the cream cheese and mayonnaise together in a separate bowl. Add the onions.
  • Cover with plastic wrap and refrigerate overnight. Serve at room temperature.
