Ingredients

  • 3 pounds Boneless, Skinless Chicken Breasts, Cooked And Cut Into Chunks (See Note Below)
  • 1 can Cream Of Chicken Soup (10 3/4 Oz.)
  • 8 ounces, weight Sour Cream
  • 1/2 packages (1 Sleeve) Onion Flavored Crackers (like Keebler Toasteds)
  • 1/4 cups Butter, Melted (1/2 Stick)
  • Cooking Spray

Method

  • (*Note: To cook chicken for this recipe, I put the chicken in a jelly roll pan, rub chicken with olive oil and sprinkle with Kosher salt and fresh ground pepper.
  • Cover tightly with foil and bake 350 degrees for 30 minutes.
  • Let sit covered for 5 minutes longer.
  • Uncover and cool for 5 minutes or until you can handle it to cut up.
  • You could also poach the chicken instead.)
  • Place cooked chicken chunks in a 9 x 13 baking dish sprayed with cooking spray.
  • Mix cream of chicken soup with sour cream and pour over chicken.
  • Bake for 1/2 hour, uncovered.
  • Crush up 1 sleeve of crackers and mix with melted butter.
  • Sprinkle on top of chicken.
  • Bake another 1/2 hour, uncovered.
